I use a Kitchen Aid Artisan stand mixer for mixing and kneading the dough. Mixing and kneading by hand would work just fine if my thumbs weren't too arthritic to take the pressure.

By the way, Kango Suz, there's no sugar or honey in this bread. French bread is flour, yeast, water and salt. Nothing else.

Well, I hope you're happy...now all I seriously crave a baguette!
Since I have no luck finding anything authentic in Naples, FL, I shall now attempt to bake one myself.

Question - which bread making machine or food processor is the best for baking? Which one do you use?

Thanks!

yummy... glad you worked out the slashing technique. I usually just skip it because I've never figured out how to get it right!

That's a TON of bread though, how are you consuming it all?

Also, if you're making that much bread, consider (if you've got any go left in you) using honey instead of regular sugar. Honey has natural preservatives in it that will keep the bread fresher longer. *grin* Keep it up!
